- 3 large ripe bananas (very ripe, brown-spotted)
- 1/3 cup unsalted butter (melted)
- 3/4 cup sugar
- 1 large egg
- 1 tsp vanilla extract
- 1 tsp baking soda
- 1/4 tsp salt
- 1 1/2 cup all-purpose flour
- 1/2 tsp cinnamon (optional)

Preheat oven to 350°F. Grease a 9x5 inch loaf pan or line with parchment paper.

Mash bananas in a large bowl with a fork until mostly smooth with a few chunks remaining.

Stir melted butter into the mashed bananas. Mix in sugar, beaten egg, and vanilla.

Sprinkle baking soda, salt, and cinnamon over the mixture. Stir to combine. Add flour and stir until JUST incorporated — a few streaks of flour are fine.

Pour batter into prepared pan. Bake 50-60 minutes until a toothpick inserted in the center comes out clean or with just a few moist crumbs.
If the top browns too fast, tent with foil at the 40-minute mark.

Cool in pan 10 minutes, then turn out onto a wire rack. Resist cutting for at least 15 minutes — the bread is still cooking inside.
