Ingredients
- 1 1/2 lb boneless skinless chicken breasts
- 8 oz egg noodles
- 8 cup chicken broth
- 3 medium carrots (peeled and sliced)
- 3 stalks celery (sliced)
- 1 medium yellow onion (diced)
- 3 cloves garlic (minced)
- 2 tbsp olive oil
- 1 tsp dried thyme
- 2 pieces bay leaf
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp fresh parsley (chopped)
- 1 tbsp lemon juice
Instructions

Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery. Cook 5-6 minutes until softened. Add garlic and cook 30 seconds.

Add chicken broth, whole chicken breasts, thyme, bay leaves, salt, and pepper. Bring to a boil, then reduce to a simmer. Cook 15 minutes until chicken reaches 165°F internal temperature.

Remove chicken breasts and shred with two forks. Discard bay leaves. Add egg noodles to the soup and cook 7-8 minutes until tender.

Return shredded chicken to the pot. Stir in lemon juice and parsley. Taste and adjust salt.
