Ingredients

  • 1 1/2 lb boneless skinless chicken thighs
  • 1/3 cup soy sauce
  • 3 tbsp mirin
  • 1 tbsp rice vinegar
  • 3 tbsp brown sugar
  • 3 cloves garlic (minced)
  • 1 tsp fresh ginger (grated)
  • 1 tbsp cornstarch (mixed with 2 tbsp water)
  • 1 tbsp vegetable oil
  • 4 cup cooked white rice
  • 3 cup broccoli florets
  • 1 tbsp sesame seeds
  • 3 stalks green onions (sliced)

Instructions

    Whisk together soy sauce, mirin, rice vinegar, brown sugar, garlic, and ginger in a bowl. Set aside.

    Heat vegetable oil in a large skillet over medium-high heat. Cook chicken thighs 5-6 minutes per side until golden and cooked to 165°F. Remove and let rest.

    Steam broccoli florets for 3-4 minutes until tender-crisp. Set aside.

    Pour teriyaki sauce into the skillet. Bring to a simmer. Stir in cornstarch slurry and cook 2 minutes until sauce is thick and glossy.

    Slice chicken and assemble bowls: rice on the bottom, sliced chicken and broccoli on top. Drizzle with teriyaki sauce. Garnish with sesame seeds and green onions.
