Skillet Lemon Garlic Chicken

Ingredients

  • 8 piece bone-in chicken thighs (skin-on)
  • 1 1/2 tsp kosher salt
  • 1 tsp black pepper
  • 2 tbsp olive oil
  • 10 cloves garlic (smashed)
  • 2 piece shallots (sliced)
  • 1/2 cup dry white wine
  • 3/4 cup chicken stock
  • 3 tbsp lemon juice
  • 1 tsp lemon zest
  • 1 piece lemon slices (thin)
  • 6 sprig fresh thyme
  • 1 tbsp fresh oregano (leaves)
  • 1/4 tsp red pepper flakes

Instructions

    Preheat oven to 425°F. Pat chicken bone-dry, season hard with salt and pepper.

    Dry skin = crispy skin. Moisture is the enemy of crunch.

    Heat oil in cast iron over medium-high until shimmering. Place thighs skin-down, press flat. Don't move for 8 minutes — let skin render and brown hard.

    Flip, add garlic and shallots to the fat. Cook 2 minutes until garlic is golden.

    Deglaze with wine, scraping fond. Add stock, lemon juice, zest, thyme, oregano, chili flakes, lemon slices.

    Lemon juice and zest both — juice for acid, zest for perfume.

    Transfer skillet to oven, roast 15-18 minutes until thighs are 175°F (bone-in needs a little more than breast).

    Bone-in thigh safety minimum is 165°F but 175°F is where the collagen melts and they get silky.

    Rest chicken on a plate. Reduce sauce on stovetop 2 minutes if needed. Taste — more lemon if flat. Spoon over chicken.
