Ingredients

  • 1 cup full-fat cottage cheese (4% milkfat — low-fat will not work)
  • 2 piece large eggs
  • 1 tsp Italian seasoning
  • 1/2 tsp garlic powder
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 2 tbsp grated Parmesan (optional, for crust)
  • 1 tbsp everything bagel seasoning (optional topping)
  • 1/4 tsp flaky sea salt (to finish)

Instructions

    Preheat oven to 350°F. Line a sheet pan with parchment — not foil, not a silicone mat. Parchment is the only way it releases.

    This is the #1 failure point online. Parchment is non-negotiable.

    Blend cottage cheese, eggs, Italian seasoning, garlic powder, salt, and pepper in a blender or food processor until completely smooth and silky, 60 seconds. No curds should remain.

    Smooth batter = chewy bread. Chunky batter = scrambled eggs on a tray.

    Pour the batter onto the parchment and spread into an even rectangle about 1/4 inch thick. Sprinkle with Parmesan and everything seasoning.

    Bake 30-35 minutes until deep golden brown at the edges and firm to the touch in the center. Don't pull early — underdone flatbread is rubbery.

    Cool 5 minutes on the pan, then peel off the parchment. Finish with flaky sea salt. Cut, roll, or fold.

    For maximum crisp, flip and broil 60 seconds on the second side.
