Ingredients

  • 1 1/2 lb dry sea scallops (about 16 large, U-10 size)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp vegetable oil (high smoke point)
  • 3 tbsp unsalted butter
  • 3 cloves garlic (thinly sliced)
  • 2 tbsp capers (drained)
  • 2 tbsp lemon juice
  • 3 tbsp white wine
  • 2 tbsp fresh parsley (chopped)
  • 1 tsp lemon zest

Instructions

    Remove side muscle from each scallop if present. Pat scallops extremely dry with paper towels. Season with salt and pepper. Let sit uncovered on paper towels 10 minutes.

    Moisture is the enemy of a good sear. You cannot over-dry scallops. Press them firmly in paper towels.

    Heat vegetable oil in a large cast iron or stainless steel skillet over high heat until just smoking. Place scallops clockwise, leaving 1 inch between each. Do not move them for 2 minutes until a deep golden crust forms.

    Work in batches if needed. Crowding the pan creates steam instead of a sear.

    Flip scallops. Add butter to the pan. As it foams and turns golden brown (about 90 seconds), tilt the pan and baste scallops with the brown butter. Cook 1 more minute. Scallops should reach 145°F internal. Remove to a plate.

    Reduce heat to medium. Add garlic slices and capers to the brown butter. Cook 30 seconds until garlic is fragrant. Add white wine and lemon juice, swirling the pan to deglaze. Let reduce for 30 seconds.

    The wine hits the hot pan and deglazes all those caramelized bits. Pure concentrated flavor.

    Spoon the brown butter caper sauce over the scallops. Finish with lemon zest, fresh parsley, and a final drizzle of good olive oil.

    Restaurant secret: The brown butter is everything. Don't stop cooking it when it foams - wait for the nutty aroma and golden color.
