Ingredients

  • 56 oz canned whole San Marzano tomatoes (two 28-oz cans)
  • 1 large yellow onion (diced)
  • 4 cloves garlic (minced)
  • 2 cup vegetable broth
  • 1/2 cup heavy cream
  • 1/2 cup fresh basil (packed leaves)
  • 3 tbsp olive oil
  • 2 tbsp unsalted butter
  • 1 tsp sugar
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp red pepper flakes

Instructions

    Heat olive oil and butter in a large pot over medium heat. Cook diced onion 5-6 minutes until soft and translucent. Add garlic and cook 1 minute.

    Add tomatoes (with juices), vegetable broth, sugar, salt, pepper, and red pepper flakes. Crush tomatoes with the back of a spoon. Bring to a boil, then reduce to a simmer. Cook 20 minutes.

    Add fresh basil. Use an immersion blender to puree until completely smooth. (Or carefully blend in batches in a regular blender.)

    If using a regular blender, leave the lid slightly cracked to vent steam and hold a towel over the top.

    Stir in heavy cream. Taste and adjust salt. Serve with a drizzle of olive oil and fresh basil leaves.
