- 1 1/2 lb flank steak (thinly sliced against the grain)
- 4 cup broccoli florets
- 3 tbsp soy sauce
- 2 tbsp oyster sauce
- 1 tsp sesame oil
- 2 tbsp cornstarch (divided)
- 4 cloves garlic (minced)
- 1 tbsp fresh ginger (grated)
- 1/2 cup beef broth
- 1 tbsp brown sugar
- 2 tbsp vegetable oil
- 4 cup cooked white rice (for serving)

Toss sliced beef with 1 tbsp cornstarch and 1 tbsp soy sauce. Let sit 10 minutes. This velveting technique keeps the beef tender.

Mix remaining 2 tbsp soy sauce, oyster sauce, sesame oil, beef broth, brown sugar, and remaining 1 tbsp cornstarch in a small bowl. Set sauce aside.

Heat 1 tbsp oil in a wok or large skillet over high heat. Sear beef in a single layer, 1-2 minutes per side. Remove and set aside.

Add remaining oil. Stir-fry broccoli 3-4 minutes until bright green and tender-crisp. Add garlic and ginger, cook 30 seconds.

Return beef to the pan. Pour in sauce and toss everything together. Cook 1-2 minutes until sauce thickens and coats everything. Serve over rice.
