Ingredients

  • 1 1/2 lb boneless chicken thighs (cubed)
  • 2 tbsp soy sauce (divided)
  • 1 tbsp Shaoxing wine
  • 1 piece egg white
  • 1/2 cup cornstarch
  • 1/4 cup all-purpose flour
  • 4 cup neutral oil (for frying)
  • 1 cup fresh orange juice (about 3 oranges)
  • 2 tbsp orange zest
  • 2 tbsp rice vinegar
  • 1/4 cup sugar
  • 2 tbsp soy sauce (sauce)
  • 3 cloves garlic (minced)
  • 1 tbsp fresh ginger (grated)
  • 1/2 tsp red pepper flakes
  • 1 tbsp cornstarch slurry (with 2 tbsp water)
  • 1 tbsp sesame seeds
  • 2 piece scallions (sliced)

Instructions

    Marinate chicken in 1 tbsp soy, Shaoxing, and egg white for 15 minutes.

    Toss chicken with cornstarch and flour. Shake off excess. Fry in 350°F oil 4-5 minutes until golden and 165°F. Drain.

    Reduce orange juice in a saucepan over medium-high until it's about 2/3 cup, 5 minutes. This concentrates real orange flavor.

    Reduction is why homemade beats bottled — no cornstarch-and-food-coloring slime.

    Add zest, vinegar, sugar, remaining soy, garlic, ginger, chili flakes. Simmer 2 minutes.

    Whisk in slurry, cook 30 seconds until glossy. Toss hot chicken in sauce. Finish with sesame seeds and scallions.
