Ingredients
- 1 1/4 lb boneless chicken thighs (diced)
- 1 tbsp soy sauce
- 1 tbsp Shaoxing wine
- 1 tbsp cornstarch
- 2 tbsp Chinkiang black vinegar
- 2 tbsp soy sauce (sauce)
- 2 tsp sugar
- 3 tbsp chicken stock
- 1 tsp cornstarch (slurry)
- 3 tbsp neutral oil
- 1 tsp Szechuan peppercorns
- 10 piece dried red chiles (Tianjin, broken)
- 4 cloves garlic (sliced)
- 1 tbsp fresh ginger (sliced)
- 4 piece scallions (whites in 1-inch pieces, greens sliced)
- 1/2 cup roasted peanuts (unsalted)
Instructions

Marinate chicken with soy, Shaoxing, and cornstarch 15 minutes.

Whisk sauce: black vinegar, soy, sugar, stock, slurry. Set aside.
Chinkiang vinegar is non-negotiable — malty, smoky, unlike rice vinegar.

Toast Szechuan peppercorns in a dry wok 30 seconds until fragrant. Grind coarsely. Return to empty wok.
Grinding releases the citrusy ma-la tingle — whole peppercorns are a texture bomb.

Heat oil until shimmering. Add chiles, stir 15 seconds until dark red and aromatic — don't burn.

Add chicken in one layer, sear undisturbed 90 seconds, then stir-fry 2 more minutes until 165°F.

Add garlic, ginger, scallion whites, ground peppercorns, stir 30 seconds.

Pour in sauce, toss 45 seconds until glossy. Kill heat, fold in peanuts and scallion greens.
Peanuts go in last — stay crunchy, not soggy.
