Ingredients
- 30 oz canned chickpeas (two 15-oz cans, drained and rinsed)
- 14 oz coconut milk (full-fat, one can)
- 14 oz crushed tomatoes (one can)
- 1 medium yellow onion (diced)
- 4 cloves garlic (minced)
- 1 tbsp fresh ginger (grated)
- 2 tsp garam masala
- 1 tbsp curry powder
- 1/2 tsp turmeric
- 1 tsp cumin
- 2 tbsp olive oil
- 1 tsp salt
- 1/4 cup fresh cilantro (for garnish)
- 2 cup basmati rice (cooked, for serving)
Instructions

Heat olive oil in a large pot over medium heat. Cook onion 4-5 minutes until softened. Add garlic and ginger, cook 1 minute until fragrant.

Add garam masala, curry powder, turmeric, and cumin. Stir and cook 30 seconds until spices are fragrant and bloomed.

Add crushed tomatoes, coconut milk, chickpeas, and salt. Stir well. Bring to a simmer and cook 15 minutes, stirring occasionally, until thickened.

Taste and adjust salt. Serve over basmati rice, garnished with fresh cilantro.
