Classic Lasagna Bolognese
Slow-simmered Bolognese, silky bechamel, real Parmigiano, fresh pasta sheets. The proper Emilia-Romagna version, not red-sauce cafeteria lasagna.

Ingredients
- 4 oz pancetta (finely diced)
- 1 lb ground beef chuck
- 1/2 lb ground pork
- 1 medium yellow onion (finely diced)
- 1 medium carrot (finely diced)
- 2 stalks celery (finely diced)
- 4 cloves garlic (minced)
- 3 tbsp tomato paste
- 1 cup dry red wine (Chianti or Sangiovese)
- 1 cup whole milk (for the Bolognese)
- 1/4 tsp nutmeg (freshly grated)
- 28 oz San Marzano whole tomatoes (crushed by hand)
- 1 cup beef stock
- 1 piece bay leaf
- 6 tbsp unsalted butter (for bechamel)
- 1/3 cup all-purpose flour
- 4 cup whole milk (for bechamel, warmed)
- 2 cup Parmigiano-Reggiano (freshly grated)
- 1 lb fresh lasagna sheets (or no-boil dried)
- 1 tbsp kosher salt
- 1 tsp black pepper
- 1/4 cup fresh basil (torn, for finish)

Render pancetta in a Dutch oven over medium until fat is liquid and pancetta is pale gold, 5 minutes.

Add onion, carrot, celery with a pinch of salt. Sweat 10 minutes until totally soft and sweet. Add garlic, cook 60 seconds.
The soffritto cannot be rushed. Rushed soffritto = thin Bolognese.

Add beef and pork, break up, and cook 12 minutes over medium-high until all water evaporates and meat starts to sizzle in its own fat — it should fry, not boil.

Stir in tomato paste, toast 2 minutes. Deglaze with red wine, scraping the bottom. Reduce until almost dry, 5 minutes.

Add milk and nutmeg, simmer until absorbed, 10 minutes. Add crushed tomatoes, stock, bay leaf, 1 tsp salt, black pepper. Simmer partially covered on very low heat for 90 minutes — it should barely bubble.
The milk-then-tomato sequence is the Emilia-Romagna trick. It tenderizes the meat.

Make bechamel: melt butter in a saucepan, whisk in flour, cook 90 seconds. Slowly pour in warm milk while whisking constantly. Simmer 8 minutes until it coats a spoon. Season with 1 tsp salt and pinch nutmeg.

Preheat oven to 375°F. Butter a 9x13 baking dish. Thin layer of Bolognese on the bottom. Pasta sheets. Bolognese, bechamel drizzle, Parmigiano. Repeat 5-6 layers, ending with bechamel and a heavy Parmigiano blanket.
Thin layers of each — not heavy slabs. Six thin layers > three thick ones.

Cover with foil (tented so it doesn't stick), bake 30 minutes. Uncover and bake 20-25 more until deeply golden and bubbling at the edges.

REST 20 minutes before cutting. This is non-negotiable or you'll get soup on the plate. Finish with fresh basil.
