Ingredients
- 2 lb ground beef (80/20 blend)
- 3/4 cup breadcrumbs
- 1/3 cup whole milk
- 2 large eggs
- 1 medium yellow onion (finely diced)
- 3 cloves garlic (minced)
- 2 tbsp Worcestershire sauce
- 1 1/2 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
- 1/2 cup ketchup
- 2 tbsp brown sugar
- 1 tbsp apple cider vinegar

Preheat oven to 350°F. Soak breadcrumbs in milk for 5 minutes — this is the panade that keeps it moist.

In a large bowl, combine ground beef, soaked breadcrumbs, eggs, onion, garlic, Worcestershire, salt, pepper, and thyme. Mix gently with your hands until just combined — do not overwork.

Shape into a loaf on a foil-lined baking sheet or in a loaf pan. Bake for 40 minutes.
Free-form on a sheet pan gets better crust on the outside than a loaf pan.

Mix ketchup, brown sugar, and apple cider vinegar for the glaze. Spread over the meatloaf. Bake 20 more minutes until internal temperature reaches 160°F.

Rest 10 minutes before slicing. The internal temperature will rise a few degrees while resting.
