Ingredients
- 1/2 cup rolled oats (old-fashioned, not instant)
- 1 medium ripe banana (the spottier the better)
- 1 piece large egg
- 1/4 cup milk of choice
- 1 tbsp maple syrup
- 1 tbsp unsweetened cocoa powder (Dutch-process preferred)
- 1/2 tsp baking powder
- 1/2 tsp vanilla extract
- 1/8 tsp kosher salt (pinch)
- 1 piece dark chocolate square (70%, for molten middle)
- 1/8 tsp flaky sea salt (to finish)

Preheat oven to 350°F. Grease a 10-12 oz ramekin.
A deep, narrow ramekin gives cake-like rise; a shallow dish bakes flat.

Blend oats, banana, egg, milk, maple, cocoa, baking powder, vanilla, and kosher salt until completely smooth, 45 seconds.

Pour half the batter into the ramekin. Press the chocolate square into the center. Cover with remaining batter.

Bake 20-22 minutes until puffed and set on top but still slightly jiggly in the center (the chocolate square keeps it molten).
Overbake = dry cake. The jiggle is the point.

Finish with flaky sea salt. Eat with a spoon directly from the ramekin.
