Ingredients

  • 1 1/2 lb beef ribeye (thinly sliced (freeze 20 min for easier slicing))
  • 8 slices provolone cheese
  • 4 pieces hoagie rolls
  • 1 medium green bell pepper (sliced)
  • 1 large yellow onion (sliced)
  • 2 tbsp vegetable oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder

Instructions

    Heat 1 tbsp oil in a large skillet over medium-high heat. Sauté sliced onion and pepper 5-6 minutes until softened and lightly charred. Remove and set aside.

    Add remaining oil to the pan. Cook beef slices over high heat, seasoning with salt, pepper, and garlic powder. Use spatulas to chop and stir, about 3-4 minutes until just cooked through.

    Chop the beef into smaller pieces as it cooks, just like they do in Philly.

    Divide meat into 4 portions in the skillet. Top each with peppers, onions, and 2 slices of provolone. Cover pan for 1-2 minutes until cheese melts.

    Split hoagie rolls and toast briefly. Use a spatula to scoop each portion into a roll. Serve immediately.
