Ingredients
- 1 cup old-fashioned rolled oats (not instant)
- 1 cup milk (any kind)
- 1/3 cup plain Greek yogurt
- 2 tbsp chia seeds
- 2 tbsp maple syrup
- 1 tsp vanilla extract
- 1 pinch pinch of salt
- 1/2 tsp lemon zest (optional but recommended)
- 1/2 cup fresh berries (for topping)
- 1 tbsp almond butter (for topping)
- 1 tsp honey (for drizzling)
Instructions
- 1
Combine rolled oats, milk, Greek yogurt, chia seeds, maple syrup, vanilla extract, salt, and lemon zest in a jar or container. Stir well to combine.
The chia seeds are the secret weapon. They absorb liquid and create a pudding-like texture.
- 2
Seal the container and refrigerate at least 6 hours, or overnight. The oats will absorb the liquid and become thick and creamy.
- 3
In the morning, stir the oats. If too thick, add a splash of milk. Top with fresh berries, a drizzle of almond butter, and a touch of honey. Eat cold or microwave 2 minutes if you prefer warm.
Restaurant secret: A tiny pinch of salt and the lemon zest prevent the oats from tasting flat. It's what separates great from good.
