Filipino Pancit Bihon

Ingredients
- 12 oz rice vermicelli (bihon)
- 3/4 lb chicken thighs (boneless, sliced)
- 1/2 lb medium shrimp (peeled)
- 2 piece Chinese sausage (lap cheong) (sliced)
- 3 cup chicken stock
- 1/4 cup soy sauce
- 2 tbsp oyster sauce
- 1 tbsp fish sauce
- 3 tbsp calamansi or lime juice
- 1 piece yellow onion (sliced)
- 6 cloves garlic (minced)
- 2 piece carrots (julienned)
- 4 cup green cabbage (shredded)
- 1 cup snow peas
- 3 piece scallions (sliced)
- 3 tbsp neutral oil
- 1/2 tsp black pepper
- 6 piece lemon wedges (for serving)
Instructions

Soak rice noodles in warm water 10 minutes until pliable. Drain.
Don't over-soak — they finish in the sauce. Mushy noodles are the #1 pancit sin.

Heat 1 tbsp oil in a wok over high. Sear sausage 1 minute, add shrimp 90 seconds until just pink. Remove.

Add 1 tbsp oil, chicken in a single layer, sear 3 minutes until 165°F. Remove.

Add last tbsp oil, onion and garlic, stir 2 minutes. Add carrots, cabbage, snow peas, cook 2 minutes.
Veg should stay crisp — never mushy. High heat, keep moving.

Pour in stock, soy sauce, oyster sauce, fish sauce, pepper. Bring to boil.
Fish sauce adds the funky umami base; calamansi at end brightens it.

Add drained noodles. Toss with tongs 3-4 minutes until liquid is absorbed and noodles are tender.

Return proteins, toss. Kill heat, add calamansi/lime juice and scallions. Serve with more lemon on the side.
The acid at finish is what separates homemade from bland takeout.
