Ingredients
- 4 pieces large flour tortillas (10-inch burrito size)
- 8 large eggs
- 8 oz breakfast sausage (crumbled)
- 2 cup frozen hash browns (or diced potatoes)
- 1 cup cheddar cheese (shredded)
- 3 stalks green onions (sliced)
- 1 tbsp unsalted butter
- 2 tbsp vegetable oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup salsa (for serving)
- 1/4 cup sour cream (for serving)

Heat vegetable oil in a large skillet over medium-high heat. Cook hash browns 6-8 minutes, flipping occasionally, until golden and crispy. Season with salt. Remove and set aside.

In the same skillet, cook crumbled sausage over medium-high heat 5-6 minutes until browned and cooked through to 160°F. Drain excess fat.

Reduce heat to medium-low. Add butter. Pour in beaten eggs seasoned with salt and pepper. Scramble gently, pushing from edges to center, until just set but still slightly moist. About 3 minutes.

Warm tortillas in a dry skillet or microwave. Layer eggs, sausage, hash browns, cheese, and green onions down the center. Fold bottom up, then sides in, and roll tightly. Serve with salsa and sour cream.
