Ingredients
- 24 large baby bella mushrooms (stems removed and reserved)
- 1/2 lb Italian sausage (removed from casing)
- 4 oz cream cheese (softened)
- 1/2 cup parmesan cheese (grated, divided)
- 3 cloves garlic (minced)
- 1 medium shallot (finely diced)
- 2 tbsp fresh parsley (chopped)
- 1 tbsp lemon juice
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/8 tsp red pepper flakes

Preheat oven to 375°F. Remove mushroom stems and finely chop them. Brush mushroom caps with olive oil and arrange cavity-side up on a baking sheet. Season with a pinch of salt.

Cook sausage in a skillet over medium-high heat, breaking into fine crumbles, until browned and cooked through to 160°F, about 6 minutes. Add shallot and chopped mushroom stems. Cook 3 minutes until softened. Add garlic, cook 1 minute.
Finely chop the stems and cook them down. They add mushroom flavor and help bind the filling.

Remove from heat. Stir in cream cheese, 1/4 cup parmesan, lemon juice, parsley, pepper, and red pepper flakes. Mix until the cream cheese is fully melted and combined.

Spoon or pipe the filling into each mushroom cap, mounding it slightly. Sprinkle remaining parmesan over the tops. Bake 20-25 minutes until mushrooms are tender and tops are golden brown.
Restaurant secret: Broil the last 2 minutes for an extra-golden crust that shatters when you bite.
